I don't usually blog about food, but I thought this Summer Stir Fry that we had for supper tonight was really good. This meal was courtesy of The Pioneer Woman . All of the recipe ingredients (except for the shrimp splurge, which Jesse bought from the local fresh seafood truck) came fresh from local sources-- including my own tomatoes. My zucchini plant bit the dust about a month ago. Interestingly, I do have another zucchini plant growing and flowering in my compost bin.... Anyways, I thought this was a good way to use the fresh vegetables that were available. And, it is even gluten free! I must keep that in mind. We did put it over noodles for the kids sake, but I think it would be even better over rice-- or just by itself. Doesn't it look scruptious? And, it looks so pretty! I'm getting hungry just looking at it again :)
